Quick + Easy No Bake Oatmeal Peanut Butter Protein Bites

YIELD:
 12-15 BITES; PREP TIME: 5 MINUTES;

ingredients:

1 cup old-fashioned rolled oats ( i use  steel cut Coaches Oats)
1/4 cup ground flaxseed
1/4 cup almonds, chopped
2 tablespoons chia seeds
1/8 teaspoon cinnamon
a pinch of salt
1/4 cup + 2 tablespoons peanut butter, melted
1/4 cup + 1 tablespoon honey
1/4 teaspoon vanilla extract
2 tablespoons mini chocolate chips
1/4 cup ground peanuts or ground almonds, to roll the balls in or add to the mixture
1 scoop of your favorite protein powder *optional*
1 Tblsp of coconut oil *optional* this adds moisture

**if you really want a nutrition packed snack add 1 scoop your favorite Shakeology powder ( 1/2 choc  1/2 vanilla is amazing) 

directions:

Combine oats, almonds, flaxseed, salt and cinnamon in a large bowl and stir.

Melt peanut butter (I melted mine in the microwave for about 30 seconds, then stirred), then stir in chia seeds, honey and vanilla extract until it’s combined. Once peanut butter has cooled a bit, pour it over the oat mixture and mix well with a spoon then bring together with your hands. Add in 1 Tblsp coconut oil if mixture seems a little dry. Once mixture is sticking together, fold in chocolate chips.

Roll dough into golf-ball sized (or slightly smaller) balls, then roll in ground peanuts or ground almonds. These can be eaten at room temp but we really like them stored in the fridge!

Weekend Treat Recipe! Berry Cheesecake Pops

Raspberry-Cheesecake-Popsicles-1-sm1 cup organic cream cheese
1 cup of frozen mixed berries (your choice)
2-3 tbsp of pure maple syrup, honey, or 2-3 packets of Stevia
1 cup of milk, raw preferred (may also use milk alternative)
Instructions

Place all ingredients into blender.
Blend until smooth
Pour mixture into paper cups and insert popsicle stick into the middle (pre-made popsicle forms can also be used)
Place in freezer and allow to freeze for at least 2-3 hours.

 

 

This is our favorite night time treat!!

Shakeology chocolate frosty milk shake (better than a salad tastes like ice cream!)

1 scoop Shakeology
6 oz. milk (skim, almond or soy)
1 packet of Truvia or your favorite all natural sweetener ( agave/honey )
1 cup of ice

The trick to this is thickness and the added sweetness of the Truvia…yumm!! We eat it with a spoon and it is gone in 2 minutes!  Great way to sneak in all those vitamins and vegies- way better than a salad!

 

 

 

Awesome lunch, snack or dinner recipe you can serve warm, cold or pack to go!

Croissant pinwheels

These are fabulous- we use the refrigerator crescent rolls and you can make anything:
– Mini pizzas with sauce, cheese, bacon bits
– Mini cinnamon rolls so they are just bite size and you control the ingredients!
– Mini turkey cheese melts (turkey or ham is great! )
– Mini breakfast wraps with eggs, cheese and sausage

Basic directions:

Heat oven to 350°F.
Unroll crescent roll dough; separate into 4 rectangles. Firmly press perforations to seal. If using dough sheet: Unroll dough; cut into 4 rectangles.
Spread filling (sauce, cheese, cinnamon butter etc.) over each rectangle to within ¼” of edges
Sprinkle with toppings.
Starting with one short side, roll up each rectangle; press edge to seal.
With serrated knife, cut each roll into 6 slices; place cut side down on ungreased cookie sheet.
Once all pinwheels are placed on cookie sheet you can top with extra toppings if you would like
Bake 13 to 15 minutes or until edges are golden brown.
Immediately remove from cookie sheet. Serve warm.

 

COOKING VEGIES FOR KIDS:


How about hiding your vegies?? (this is so easy and no one knows the difference!)

Cauliflower in mashed potatoes: Place potatoes and enough water to cover in large pot. Bring to a boil.  Reduce heat to medium and cook for approximately 15 to 20 minutes or until potatoes are tender. Add cauliflower to potatoes during the last 5 minutes of cooking. Drain potatoes and cauliflower well. Place both potatoes and cauliflower back in pot and add milk, butter, salt and pepper. Mash using hand-held masher until smooth. You can also use a hand-held electric mixer for creamier potatoes.

 

 

 

 NON Fried Rice

Brown Rice
Eggs
Bacon bits ( all natural turkey or real bacon pieces with fat removed)
optional: peas or other veggies
toasted sesame oil

heat pan; add 1 tsp toasted sesame oil and cook eggs; add in cooked rice, bacon bits and peas, season with Braggs, heat and serve!

It hasn’t been an easy journey to get to this point, and it has taken a lot of dedication, faith, inspiration, perspiration, hard work, and a lot of pain to get this far.I have put it in my mind I will not quit and I will stick with that as long as fate allows me too and even then I will still fight. Jules I am so happy that you too have stood up against your MS and please never give up! Graciela thanks for the spokesman comment,that’s kind of funny. But in all seriousness I am not in this to become anything other than an inspiration for others. If one leads to the other than so be it. I just want to get my story out by any means. I know there are thousands of people in this world who believe that it is too much of a struggle to loose weight, that it’s not possible, or that they just cant do it.
